Chocolate Basque Cake

I’ve always loved traditional French Basque cake with its creamy vanilla pastry cream filling sandwiched between moist and flaky pastry. Sort of a “cakey pastry.” Or maybe you can call it a “flaky cake”? Either way, my chocolate version pays homage to both official versions, the second official version containing a black cherry jam filling.
