Properly translating in the topic of food requires intimate experience with food in the cultures of both the source and target languages, and as much expertise in the topic as with any other complex subject matter, such as medicine or engineering. As a culinary translator you have to think back to your own experiences with the ingredient, envision how the home cook will work in his/her own kitchen with the author's suggested equipment and ingredients, and have tasted that particular dish -- you have to BE a cook within both cultures.
