Parisian Chocolate "Fooj"

Hands down, I really do believe this is the best chocolate fudge I’ve ever eaten because it delivers on both texture and chocolate flavor, and I’m confident you’ll love it, too! I never really liked chocolate fudge because of its overall little chocolate flavor and cloying sweetness (Some fudge recipes can contain up to 2 cups of sugar for one 8 x 8 pan of fudge!).

My Parisian Chocolate “Fooj” is significantly lower in sugar, so it delivers richness from chocolate not sugar, and achieves an incredibly smooth texture thanks to the method you'll see in the video. All of the ingredients here work in perfect harmony to deliver a fudge made from rich dark chocolate but without bitterness.

I call this my Parisian Chocolate “Fooj” because the recipe is inspired by the recipe of my friend Matthieu in Paris, plus its deep chocolate flavor and toned-down sugar is representative of the French’s inclination for chocolate over very sweet things. One evening while at Matthieu’s parents’ home for dinner, he served two small squares of his homemade "fooj" with our coffee (I had to ask him several times what he was saying, not realizing he was pronouncing the English word “fudge” while speaking French.) It was so chocolaty with its fudgy texture yet happily missing the head-swimmingly sugary sweetness traditional American fudge so often delivers.
